Wat would you serve a small family for Easter?

it is just myself, my hubby, my 2 1/2y.o. and 8 month. We aren't sure what to have...want to make something special, though! Any ideas?

needs to be a dinner menu, not brunch :)

We are having a small(3 lb.) butterflied leg of lamb (grilled)and a few sides , new potatoes ,green salad and asparagus (and a bottle of Enfamill) for the four of us.. we have another leg of lamb for another time or any last minute guests.

    Ham, potato salad, corn, rolls, steamed broccoli or asparagus. Lemon bars for dessert

    Hi! What a nice wife and mother you are to plan something special! We have a 1 year old and are planning something nice too. Some good "spring" type dishes that would be nice:

    -Fresh greens steamed or baked with bacon. Or fresh green beans are back in season
    -Artichokes are in season, they are wonderful and kids love trying to eat them (you might have to help the 2 1/2 year old though!)
    -candied carrots (kids loooove these and very spring)
    -for main course maybe 1-2 small cornish hens baked crispy with butter
    -ham is traditional, try crusting it with your own mustard type coating.

    HAM ROLL-UPS

    Boneless ham (sliced thin enough to roll, but not so thin that it falls apart)
    Stove Top stuffing mix (chicken flavor)
    Sharp cheddar cheese

    Make stuffing mix as directed on package. Put a couple of spoonfuls on each slice of ham; roll it up and put a toothpick through it. Arrange them in a baking dish and grate some sharp cheddar cheese on top. Bake until warmed through, about 35 minutes in a slow oven

    ham, cheesy potatoes, green beans (or whatever vegatable you like) a type of small casserole, and ice cream so its good and soft for the da baby to eat lol

    but instead of ham id go for FRIED CHICKEN LOL but ham seems more traditional

    i think a ham , mashed potatoes , another vegtable , and some homemade bread ( found in the freezer section ) and for dessert you could buy a pie and bake a cake .

    Ham, potato salad, corn or baked carrots, and chocolate pudding. You can easily mash up the potatoes and carrots for the toddler and everyone loves pudding.

    My idea would be to have traditional yet kid friendly. Also, easy prep and clean-up as you'll want to play with your children rather than in the kitchen all day.

    I would purchase a small smoked ham, smoked because all you'll need to do is heat before serving. You could even add some canned pineapple and pineapple jelly on top before reheating.

    Glazed baby carrots. (The Easter bunny needs these)

    Some sort of fresh green salad - maybe spinach.

    Deviled Eggs

    I hate using canned veggies but I do love to mix a can of cream corn with whole kernel corn. Mix, place in casserole dish, put a few pats of butter, sugar, and pepper on top and place in oven with the ham.

    Rolls - I LOVE sister shubert's. (from the freezer section, in the silver tin)

    Purchase a pre-made angel food cake or pound cake(from the freezer section) along with some strawberries and whip creme for dessert.

    If it were just my small family getting together this is what I would make. Good luck and have a wonderful Easter with your family!
