• Is it ok to cover a dish that has melted cheese on top with aluminum foil??

    Ive never heard of this being a bad idea but my boyfriend just told me that I needed to remove our enchilada dinner i made last night from the foil I used.     Ive never heard of this being a bad idea but my boyfriend just told me that I needed to remove our enchilada dinner i made last night from the foil I used. I used foil to line the pan first because there was rust in it from it being scratched up. Then i used foil to cover leftovers in the pan that was lined with the foil. He told me that the reaction between foil & cheese was "not anything nice"....is there really a danger to doing this or is it ok??

    I remember going to a Mexican restaurant as a kid, and I distinctly remember every dish being served with about about a tablespoon of some sort of yellow pureed-like garnish. It was delicious and I believe it was made from corn. I ve tried googling different things and have gotten results about corn cakes (most look like corn bread, which it was not) and recipes with whole kernel corn. This was more like...a smooth, warm corn sorbet, lol. Any ideas for me to look up to try and find this?

    I'm going with my gf and her family to their beach bungalow next week. The trip is basically free. We'll be eating mostly at the bungalow. Six adults (paired into three couples) and two children will be going Each couple will be providing (purchasing and cooking) one breakfast and one dinner. And it will be catch as catch can for lunch. I'm told that the meals should be "hardy" as there will be excursions planned almost every day. My gf doesn't cook much. Her mother could have a cooking show, her cooking is that good. We've already decided I'll do the cooking and she'll do the cleaning and we'll split the food costs 50/50. The dinner is a no-brainer. Grilled hamburgers and brats (or hot dogs). But breakfast has me stumped. I don't usually cook breakfast. Occasionally I'll whip up pancakes. But I have a feeling other couples will be going the pancake route. My grandmother made a baked pancake with apples, butter and brown sugar on the bottom that you flipped. Kind of like an upside down apple pancake. It was puffy and didn't need syrup. That would be cool only I don't know how she made it . I was also considering scrambled eggs, sausage, biscuits, gravy and potatoes O'Brien. That wouldn't be too time consuming if I used canned biscuits and boil and serve gravy mix. But I'm a little leery on baking and heating up the house.

    Best answer: Removing baked goods from a cookie sheet or pan will stop residual or "carry over" cooking.
    Also removing cookies, breads, cakes and the like from the pan and placing them on a rack keeps the bottom from getting soggy.

I know hot dogs are traditional with hamburgers as grill out fodder, but should I go with my tastes or just tastes in general. Full disclosure I am doing this for a practically free vacation. I am planning to have mustard potato salad, w beans, coleslaw and tortilla chips with salsa and queso sauce (maybe--depending on the activity we do that day) while people are waiting to be served. Condiments will be catsup, mustard (both traditional yellow mustard and Guldens--again because that's the mustard I prefer), mayo, lettuce, tomato, pickles, raw onion rings, grilled onions and peppers, and sweet relish. I'll be getting the ingredients for strawberry shortcakes (angel food cake, strawberries, glaze, whipped cream) but will have these set up so they can take what they want. I will be grilling 12 burgers and 12 brats. There will be six adults and two children.
