The sentence is gramatically analogous to "I eat greedily". As such 'with my mother' is an adverbial phrase, making the verb intransitive. In the sentence "I eat anything", the verb is transitive.

It's a transitive verb as it can take a direct object.

I eat (a meal) with my mother.
