Rewrite the sentences using "(just) as ... as."
1- I am more introverted than my friends.
My friends are not as introverted as me.
2- My parents are better educated than my grandparents.
My grandparents are not as well educated as my parents.
3- Her children are more creative than my children.
My children are not as creative as her children.
4- Helen is the least confident person in her family.
Helen is not as confident as others in the family.
5- Rome and Rio de Janeiro are equally interesting.
Rome is just as interesting as Rio de Janeiro.

Yes, "just as" means "equally" not "more than" and it should be "My parents are just as well educated as my grandparents."

OK, but using just as... as completely changes the meaning of the sentences.
I am just as introverted as my friends.
OR
My friends are just as introverted as me.
My parents are just as educated as my grandparents.
I don't know why your teacher would give you such a mechanical exercise that doesn't convey any meaning.
